High calorie healthy meal

Tonight I will be going swimming for an hour and doing an hour of water-aerobics so I will be burning a lot of calories. I want to have a larger meal tonight and want something relatively healthy.

I normally have a 2 or 3 egg omellette with cheese and veg, some yoghurt with maybe some potatoes or bread but I fancy something different. I don’t want to eat junk food but it needs to be something fairly quick to prepare as I am starving by the time I get home. Unfortunately I don’t like nuts which is a pain as they are a great high calorie snack!

Any ideas?
