Hey All.

So it's my birthday tomorrow, and I always make my own cake. Today I made a Red Velvet Cake. It looks great, but red velvet cake needs frosting, ideally cream cheese frosting. the low fat cream cheese in my fridge DOES NOT work, so I was hoping some avid baker out there could give me some tips on making thick cream cheese icing that isn't too sweet. Really not a fan of super sweet frosting.

It's my birthday, so I don't care about low calorie or low fat!

    If you want to make cream cheese frosting and you don't want it too sweet...put less sugar in the frosting. I am guessing you want to make your own frosting? Use your stand or hand mixer to beat cream cheese with some sugar. An easy idea is to Google "cream cheese frosting recipe" or similar. If the sugar seems high to you, use less.

    I saw your post on my news feed, but I was looking for my recipe! :) I have a few recipes but I'll just post the one I used recently.

    Ingredients:
    1 lb. cream cheese, at room temperature
    16 Tbs. (2 sticks) unsalted butter, at room temp
    4 cups confectioners sugar
    2 tsp. vanilla extract


    In a bowl beat the cream cheese on medium speed until smooth and fluffy, about 2 to 3 minutes.
    Add the butter and continue to beat for 2 to 3 minutes more.
    Add the confectioners’ sugar 1 cup at a time and beat until smooth and no lumps of sugar are visible.
    Add the vanilla and beat until combined.

    It makes 5 cups, which is enough to frost two 9-inch cake rounds or three 8-inch cake rounds.
