Grilling veggie kabobs on a charcoal grill

Hi guys, happy Friday! The weather is beautiful here today and I bought some beautiful veggie kabobs to throw on the grill. The only problem is, I'm a rookie and I've heard they burn up fairly easily. They have huge portabella mushrooms, squash, red peppers and zucchini on them.
So, what's the best way to cook them and should I marinate them?
I have some Pam Olive Oil cooking spray with maybe salt and pepper?

mmmm.....veggie kabobs - one of the summer staples in my house!

I usually brush them with a little evoo, garlic and some herbs (dill, rosemary, thyme - really whatever you like). You could also use an italian or balsalmic dressing as a marinade. But, they would be just as good with just a little S&P too!

As far as grilling, don't put them directly over the hot coals. Have a hot side (with the majority of the coals) and a warm side (with just a few coals) and put them on the cooler side. I usually spray the grill with a little cooking spray too so they don't stick. Also, unlike most things you grill, you want to turn kabobs often so they cook evenly and don't char. Be patient - they might take awhile.

Hope this helps - enjoy!! And I'm just slightly jealous.
