I really need help staying on a diet with kids and a budget! I need some ideas for meals that are toddler friendly that won't be overkill on the calories! :happy:

Check out www.emilybites.com I found some really fun, low cal recipes for my family, including my kids... like mac n cheese cupcakes and taco cupcakes. try changing out the ground beef to ground turkey. On a budget is tough though... healthy food is more expensive, but so worth it! Hungry Girl has awesome 100 calorie dessert recipes... it'll be cheaper to make them yourself than buying the pre-packaged things.0

Growing up, almost every Sunday lunch was pot roast. Either chicken or beef, often in crockpot with veggies (carrots, sweet potatoes, white potatoes, onion, celery), about a cup of water, and cook until the meet was done.
Then, we'd put the leftovers in a casserole dish for Monday dinner, making a white sauce (or gravy) out of the meet broth, and add a biscuit crust.
Tuesday lunch would be the leftovers from that.
Easy, yes. Kid friendly, yes. Budget friendly, if you can get the meat on sale, yes. Calories, the original meal is very calorie friendly (provided you don't have too many white potatoes); if you use little butter in the gravy, and make the casserole deeper (more meat/veggies, less biscuits), it's not too bad. Plus, super delicious.0
