Difference between bread carbs and veggie carbs?

So, I'm cutting out bread, pasta, and rice and I have been successfully. I feel MUCH better since making this decision in many ways. so please don't giving me a lecture about a "long term change" and not cutting anything out because for me this IS a lifestyle change, not a quick fix to lose weight.

Anyway, so as a result of less bread & stuff, I've been eating a lot more veggies which is great. My goal is 61 carbs a day, usually I end up near 70-80. I always think that's higher than I'd like though, but it's ALL from veggies or fruit. Is there a difference between carbs in bread and carbs in veggies?

A carb is a carb. However with fruits and vegetables you get additional things you don't get with most breads. generally you get more fiber which helps offset some of the affects of the carbs on your blood sugar, so it isn't as big of a boost as eating carbs without the fiber. In addition generally you get more nutrition from the veggies and fruit than you do from bread. The carbs in bread is generally more concentrated as opposed to veggies so you can eat a lot more veggies for the same amount of carbs you would get from bread so you tend to feel more full.

Remember these are generalizations and not all bread is evil and to be avoided. the main thing is always balance and moderation.
