hi guys! I like sauce with my chicken or it has to be dipped in something....does anyone have any good sauce recipes for skinless chicken?

    Pesto!!!! it's not exactly PESTO as you would be used to, but it's my healthier take on it. i love it on chicken with a little bit of whole wheat pasta. add in some sauteed mushrooms!

    2 c fresh basil leaves
    1/4 c pine nuts, toasted
    1 garlic clove
    1/4 t kosher salt
    1/4 t black pepper
    zest and juice from one lemon
    1 T EVOO
    1 T parmesan cheese
    1/4 c greek gods plain nonfat yogurt
    1/4 c fat free ricotta cheese

    combine all in of the ingredients in a food processor and mix until blended. add more/less cheeses/garlic/salt or whatever, as you like. if i have a lot left over, i freeze it in portions that are enough for dinner for my husband and i. easy and yummy!
  • Here's a GREAT recipe for Spicy BBQ Sauce out of Tosca Reno's Eat-Clean Cookbook!!! It's FABULOUS and Good for you too!

    1 tsp Safflower Oil
    1/2 Sweet Onion, diced
    2 cloves Garlic, chopped
    1 cup low sodium Tomato Sauce
    1 Chipotle Pepper in adobo sauce, chopped
    1 Tbsp Deli or Dijon Mustard
    1 Tbsp Cider Vinegar
    1 tsp Worcestershire Sauce
    2 Tbsp Blackstrap Molasses
    1 Tbsp Honey
    1 tsp Chili Powder
    1/2 tsp smoked or sweet paprika

    Heat safflower oil in a small saucepan over medium heat. Add onion and saute until soft and starting to brown (about 5 minutes). Add garlic and cook for 1 more minute. Add rest of ingredients, stir to combine, simmer for 15 minutes or until slightly thickened. Pour into a blender and blend until smooth. Can be stored in sealed container for 2 weeks. ENJOY!
