Vegetarian Chili

Makes 8 1Cup Servings

Ingredients
1 tbsp, olive oil
1 red bell pepper
1/2 C frozen corn
1 medium onion
1 tbsp garlic
1 can organic red kidney beans
1 can diced tomatoes
1 can vegetable broth
cayenne pepper


Cook garlic, onion and bell pepper in olive oil until cooked. Add all other ingredients and bring to simmer for 20 minutes.
Serve over rice if you like (I ate it in a wrap)
