29 Calorie, 3 Ingredient Oatmeal Cookies

I came up with this after watching Hungry Girl use pumpkin puree to make Muffins. A this point in the month instead of going to the store, I try to make everyone use up what we already have. In this case I have lots of Instant oat meal and a left over can from the Holidays. Perfect! They turned out pretty darn good, and were picky eater kid tested.


1 Packet of Quaker Instant Oat Meal. ( I used Weight Control Maple & Brown Sugar for this one, any flavor will do!)
1/2 Cup of Libby's Pureed Pumpkin.
1 Tbsp Water
Scoop out into 1 Tbsp piles and mash them down a little.
Makes 7 mini cookies
29 Cals per cookie

350 for 25 mins. I did these in the Toaster oven set on bake. Seriously.

I didn't this time, but you could add in whatever you'd like, and use whatever flavor of oatmeal you have or would like. Raisins, Dates, Cinnamon or even a little nutmeg would be very good.
Feel free to add in any variations on this. I just used what I had on hand.

    great idea, i don't use instant oatmeal, but 'm going to see if they work with old fashioned rolled oats

    No, but I was watching them to make sure they didn't burn. It wouldn't hurt if you were going to do them in the oven.

    That would be good, plus you could add in some spices to make them like mini pumpkin pie cookies... Yum!

    I've used it in brownies and cake mix in place of oil.

    I wonder if this recipe would work with applesauce instead. I'm out of pumpkin... I had an open can and gave it to my cats and dog. Keeps 'em regular. :blushing:

    Okay, I made these last night and they were awesome! Mine did take longer than 10 minutes though; more like 20, but I kept opening the oven to check on them so that could be why. I needed extra calories to reach my goal, so I ate them all (100 cal packet of instant oatmeal with 40 cals of pumpkin). Plus I made a dipping sauce of plain Greek yogurt with 1tbs of peanut butter, 1/2 thinly sliced banana and a drizzle of honey. Incredible!!! A ton of food for like 350 calories total.
