Am I on track to lose body fat and gain muscle?

No you are not gaining muscle... you will be losing it.
Eating so little and exercising will not give your body what it needs to function, let alone build tissue. If you are consuming 600-1000 calories and exercising off 700.... what are you leaving your body? Your net will be -100 to 300 calories.
You need to eat at a calorie surplus and lift heavy weights to build muscle.
Consuming protein will not cause you to build muscle.
You will lose muscle eating so little. Your heart is a muscle... less muscle equals a slower metabolism. Start eating properly
What kind of foods can I eat to consume more calories with a surplus and not go over my macro and vitamin goals?
Eat anything you want to... Some of your macros and vitamin amounts are goals... not limits. Go past your protein amounts, more vitamins aren't always a bad thing. Keep under your sodium.
If you want to build muscle you need to eat more, eat a lot more.
I'm not trying to be a body builder or get big. I just really wanna lose my belly fat! Ugh it's so stressful trying to keep things balanced. I'm afraid of eating too much of certain food (such as avocados and nuts) because of the higher fat. Same with fruits and their sugar content. Doesn't excess fat and sugar get stored as fat?
I am your height and weight. Well, my goal weight was 130. I am no longer trying to lose. But I did get there eating almonds, peanut butter, and an entire avocado almost every day. Olive oil is great and so is a little butter. (assuming you can tolerate dairy) FAT DOES NOT MAKE PEOPLE FAT!!!
You are very active it sounds like and you need to fuel your body. In the long term, eating the low amount you do is going to cause problems.
Please eat at least 1200 plus ALL of your exercise calories every day. Your body will thank you later. If you are worried about one problem area, you need to stay consistent with your eating and activity to burn fat. You cannot spot reduce. As many others have stated, you won't build muscle unless you are eating at a surplus.
1200 calories plus all of your exercise calories is still a deficit, not a surplus. This is lowest amount you should eat.0 -

I thought you're suppose to do high reps of low weights for lean muscle?
8-12 reps is ideal for muscle growth at a calorie surplus. If you can do 15 reps on a weight, it's too light. But again, at a calorie surplus. If you're new to lifting you can experience some newbie gains but not while eating that little.0
