Superbowl Sunday Recipes/Dishes

So I'm hostessing a small gathering on Sunday.... I'm planning on this being my "cheat day" but I don't want to go nuts here. So anyone have some tasty but still low calorie suggestions aside from a veggie and fruit tray?

10 of these work out to 200 calories.
Tostitos Baked! Scoops –
1/4 cup finely shredded romaine lettuce
2 tablespoons finely chopped tomatoes
1/2 ounce (about 2-1/2 tablespoons) finely shredded Cabot’s 75% light cheddar cheese, or your favorite low-fat cheddar
1 teaspoon lower-sodium taco seasoning
2 ounces 96% lean ground beef
1 tablespoon mild or hot red taco sauce
Arrange the Scoops side by side on a plate.
Mix the lettuce, tomatoes and cheese in a medium bowl until well combined. Divide evenly among the Scoops (about 1-1/2 teaspoons per Scoop).
Stir 2 teaspoons water into the taco seasoning in a small bowl until it has no lumps. Set aside.
Preheat a small nonstick skillet over medium-high heat. Put in the beef. Use a wooden spoon to coarsely crumble the meat as it cooks. When the beef is no longer pink, after 1 to 2 minutes, stir in the seasoning mixture. When no liquid remains, after about 1 minute, remove from the heat.
Divide the meat evenly among the Scoops, atop the lettuce mixture (about 1 teaspoon in each). Dollop the top of each with taco sauce. Serve immediately.0 -
check out skinnytaste.com. Gina has a link on the left nav for Football party recipes. buffalo chicken dip!!! veggie queso dip!!! (can you tell I'm a cheesaholic?) it's killing me that I can't make everything, but there will only be 5 or 6 of us watching the game...just remember to put the chips and crackers out for your guests, and try and eat these with carrots or celery as your dipper. Not that you can't eat any chips at all, but try and minimize the chips and enjoy the dips instead.
I swear by skinnytaste.com. never had a bad recipe yet.0 -
I subscribe to Cooking Light, and get their newsletter and regular e-mails. They just sent one yesterday that has 20+ Super Bowl party recipes, a lot of dips and even a peanut butter dark chocolate fudge recipe that comes in at 125 cals per serving and seems really easy to make! Good luck, remember to put plenty of veggies out to dip with in addition to chips/ crackers.0

Check out the blog www.chocolatecoveredkatie.com. She is a vegan blogger whose goal is to make things that are just tasty, not "tasty, for a vegan dish." She includes nutritional information for all recipes and seems to have some really awesome additions, like black bean and sweet potato chili, chocolate chip blondie brownies, and homemade peanut butter Oreos. Might be worth a look through her blog to see if there is anything that may catch your eye :bigsmile:0
