    I'm going out tonight, but this week so far I've made bbq pulled pork (crockpot), turkey meatballs, potato & egg salad and broiled salmon fillets.

    I'm going to try and make tuna, cheese and mushroom quesadillas (sp?), no idea how they'll turn out but that's half the fun! :ohwell:

    For lunch I had cheese filled raviolli in tomato pasta sauce, lettuce, cucumber, yellow pepper, dressing and coleslaw.

    For tea I need to have something light like soup as my stomach's playing up. I usually only have one solid meal a day for this reason.

    Long grain and wild rice
  • Chickpeas with tomatoes and rice.

    Simmer some onion/garlic/cumin in a saucepan and add the tomatoes and chickpeas. Simmer for 15 minutes until it turns into a nice sauce.

    Serve 1 cup of the mixture over rice and top with cilantro. Delish!

    chicken breasts with Rotel diced tomatoes and brown rice! Super easy- brown chicken with a little s&p, dump a can of Rotel tomatoes in pan, cover and simmer til chicken breasts cooked through- about 20 minutes. I usually serve with a side of brown rice, and if I'm feeling a little cheaty, I'll top with a little low-fat shredded cheese :-) Oh, and a side of spinach.

    I'm on a low-calorie day of the 5:2 method. I'll sautee a lot of veggies with nonstick spray and throw them in chicken noodle soup from the can. (Last checked, my BP was 90/51- sodium is not a problem for me!) Bedtime snack will be 8 oz. nonfat Greek yogurt with honey and blueberries, and a glass of white wine.
