What cookbooks or meal planners are you using?

I love to cook, but trying to balance the calories, fat, sodium, cholesterol,...... not only within each meal, but spread across the meals of the day has me scratching my head.
Also I'm trying to shop and not waste money. If a recipe calls for cilantro, a really unique flavor, I'm stuck buying a bunch and then I through it away after using only 2 table spoons. Can I freeze this kind of stuff or should I buy it dry? I was reading recently that the fewer products you buy with "Nutrition Labels", the better, but that means fresh food, and planing meals to use similar "whole foods" is proving to be very difficult for me.
