Quinoa Recipes for Breakfast

A co-work has been raving about Quinoa and how is it a great low-carb sub for rice and oatmeal. I would love to begin incorporating this into my diet, especially at breakfast. I am not a breakfast food eater (don't like eggs, staying away from high carb foods like pancakes) so this may be just what I'm looking for. If you have a great recipe, please share!!!
