Rice Cake Tuna Delight!

This is a recipe that I've come up with. I'm sure I'm not the first person to invent it, and I'm sure that there are variations. But if you like a snack that is a bit salty and crunchy, this satisfies. :love:

Rice Cake Tuna Delight

1 can chunk light tuna
2T Hellman's Olive Oil Mayonaisse
1 whole dill pickle, chopped
1 large hard boiled egg, chopped
1 white cheddar rice cake

Combine first four ingredients in a bowl. Spread half onto rice cake. Enjoy! :wink:

    I have something very similar because I'm gluten-intolerant and that's my version of a tuna sandwich :wink:

    If you want to cut out a bit of calories, swap the mayo for low-fat cottage cheese!

    Oh the many meals/snack I make out of rice cakes- I keep saying I should buy stock in Quaker! :laugh:

    Apple cinnamon (or Carmel) rice cake with Dark Chocolate Dream peanut butter
    Natural almond butter on a Chocolate Crunch rice cake
    Tuna salad, egg salad, chicken salad on a plain or white cheddar rice cake
    Plain rice cake with jelly or laughing cow
    White cheddar rice cake with tomato sauce and cheese
    Carmel rice cake with natural cashew butter

    ...my list goes on and on :love:
