So my friend got me the Game of Thrones cookbook and last night we found a delicious stew that was easy to make and packed full of veggies!

It's called Lannister Cream Stew:

6 cups of chicken broth (we used low sodium)
3 cups of corn (low sodium brand from the store)
1 15oz can of fire roasted tomatoes
1 cup of shredded chicken (just a pinch of salt to season and it's wonderful)
1 cup of half and half (we tried it with and without the half and half both yummy!)
some fresh herbs (we used fresh rosemary, chives, green onions, and pepper)

We simmered the veggies in the broth for about an hour, the book says 10 min but we like to cook low and slow. Then slowly add in the herbs and chicken.

Try it first when its nice and hot to see if you like it. We saved half with cream half without. It was a nice, chunky stew that filled us up.

If you want, toasting some wheat bread (cut up in thin slices, in the oven at 400 for 7-10 min) adds a good flavor. No olive oil needed, just use some foil and sprinkle on some left over herbs!
