spaghetti sauce revved up with squash!
I've gotten hooked on a new addition to my spaghetti sauce: mashed butternut squash. Yeah, sounds weird, but wait till you try it. Works in store-bought sauce well -- check the calorie count on store sauce and the nutrition levels. We can boost fiber, beta carotene, and other nutrients by adding boiled and mashed butternut squash to the sauce. It sweetens the sauce as well. To really go high on the nutrition scale, I add spinach -- the iron in the spinach and the Vit C in the tomato sauce work together to make the Iron even more bioaccessible.
