How times have changed

I was a teenager in the mids of the high carb and low fat craze. I was also a very strict vegetarian at the time. The popular wisdom then was that beans and lentils were "incomplete" protiens, and that they needed to be combined with a grain such as rice to be a whole food.
I just calculated a rough estimate of one of my favorite recipies (caribbean rice). This dish combined black beans, white rice, canned tomatoes, onions, black olives, and a few other sundries (including a very scant amount of celery).

Just a quick and dirty estimate gives me per serving:
over 580 calories (with 1 whole serving of veggies)
174g of carbs (minus 16g fiber)
4g fat
and a whole 16g of protien.

No wonder I was so tired, hungry, and my skin broke out (and I gained weight). Huge servings of refined carbs (white rice and canned tomatoes), and very little protien. I blamed my veg lifestyle at the time, and gave it up in my early 20's. Man, looking back now my diet was as silly as believing the KISS was hardcore metal.
