Have a look on the Chocolate covered Katie blog. There is a section for single servings.
I love the 1 minute chocolate cake!

Not sure about the calories for this, but you can always do a "3,2,1 cake." Combine one boxed cake mix, flavor of choice, with one boxed angel food cake mix. Store in gallon zip-lock baggie. When you want cake, combine three tablespoons mix with two tablespoons water and microwave for three minutes. Instant cake, without the oil or eggs. Just based on volume alone, you can't possibly have more than 3 tablespoons of sugar, and you haven't added any egg, butter, dairy, or oil, so at the risk of sounding too cavalier (and getting flamed for this one), how "bad" for you can this possibly be? Add some fruit and call it good :)

I have heard of this 3,2,1 system and apparently it works well.

My 3-2-1 cake is about 120 cals. Add some fat free whip topping and it's a nice treat. Plus there is no leftover cake sitting around calling my name!
  • Thanks everyone. As for the chocolate covered Kate cake, I think the cals might be wrong
