My favorite non-meat foods to grill

I've been craving grilled food... Maybe I'm just getting tired of the winter! Some of you may enjoy these, if you haven't tried them before:

1. Grilled pineapple: marinate it overnight in coconut juice. Sprinkle some cinnamon on it while it's grilling. Grill it till there are marks on both sides.
It tastes sweet, but slightly less sweet than regular pineapple. It's as delicious as baked apples.

2. Grilled bananas: un-peel a banana, and stick some dark chocolate chips into the banana in random places. Put the peel back on and wrap in foil. Grill until it's squishy.

3. Grilled peppers with filling: slice 3 bell peppers into quarters, longways. Rub with olive oil and grill until they are warm and a bit soft. In a separate bowl, combine 1 diced avocado with a small container of goat cheese, and salt and pepper to taste. Fill the peppers with the mixture.
This is my favorite. It's very filling.

  • I love most veggies and a few fruits grilled. Grilled onions, eggplant, zucchini (marinated first), peppers, asparagus, green beans, peaches and like you said pineapple. I'm moving soon and am hoping I will have somewhere outdoors I can grill:)

I recently copied a food I had in a restaurant: Grilled portobellos, eggplant slices, red pepper all stacked on a multigrain bun with melted cheese. I did it open-faced - really good!! Could also add onions, avocado, etc.

love grilled pineapple we just had some last week! LOL Yes its cold outside but the kiddo wanted hot dogs so we worked it out. :)
I love trying new grilled veggies. We make a kabob with chicken marianated, sweet taters, onions, peppers, and tomatoes. It takes amazing on the grill :)
Ok so now I want grilled food.
