Egg White and Vege Pita

Pita Bread- Flax, Oat Bran, & Whole Wheat (1 whole)
Egg Whites (6 raw)
onion (1/4 cup)
bell pepper (1/4 cup)
mushrooms (1/4 cup)
baby spinach, raw (1 cup)
Salsa (2 tbs.)
salt and pepper

Toast Pita Bread and cut in 1/2 to form 2 pockets. Add 6 eggs (whites only) to a bowl add salt and pepper, whisk and set aside. In a Saute' Pan, put olive oil and saute' onion, bell pepper, mushrooms until tender, add baby spinach and saute until wilted. Pour egg whites over cooked vegetables and cook until eggs turn white. Add salsa and fill heated pita pockets. Enjoy!!!
