I think they're used in many Caribbean dishes in much the same way we'd use potato. You can cut them up and add them to a fish chowder made with coconut milk for a caribbean dish that I've always wanted to try.

I just roast them in the oven and enjoy. If you are okay with fried foods, you can also cut them up and fry. I love fried plantain with a side of rice and beans!

When I had them in Costa Rica they were always baked, grilled, or sauteed.

Throw them away and go buy bananas. Nah, I like them fried on the stove with coconut oil, and at the last minute, throw some roasted almonds in the skillet.
  • Make tostones! its really easy.

If they are still green, they will be starchy (which is how i like them)

Slice them into thick slices, and then fry them in oil just until they start to turn yellow (1-2 minutes). Take them out and smush them under a can or glass. then fry them again until crispy to your liking. I sprinkle mine with adobo, but salt also works.

If they are ripening, they will be sweeter, like a slightly potato-y banana. you can do the same thing but instead of salt add cool whip or dip in dark chocolate. YUM.
