Moroccan Chicken - 135 calories per portion

Here's a simple Moroccan style dish I made this evening. Personally i would double up on the herbs and spices, but I made it for the kids and they like it quite simple.

Recipe name: Moroccan chicken

Serves: 12 (and will freeze great)

Skinless Chicken - Whole Leg (Drumstick & Thigh), 6 whole leg 1,080 0 0 0 0 0
Tesco - Red, Green and Yellow Peppers, 4 Pepper (50g) 104 19 2 4 18 0

Tesco - Tinned Chopped Tomatoes In Juice, 2 container (400 gs ea.) 144 24 1 8 22 0
Generic - Ginger Root - Fresh/Raw, 1 Teaspoon 2 0 0 0 0 0

Spices - Cinnamon, ground, 2 tsp 12 4 0 0 0 1

Napolina - Extra Virgin Olive Oil, 10 ml 82 0 9 0 0 0
Add Ingredient

Literally fry the onion and garlic in the oil, once the onions are soft then add the spices and the chicken and just cook enough to coat the chicken. then add the rest of the ingredients and simmer until chicken is cooked, stirring occasionally. I guess traditionally you would serve it with cous cous and some roasted peppers, but I just served it with brown basmati rice (see profile pic).
