instant mashed potato recipes

I was gifted with a box of instant mashed potatoes and not being a fan of instant potatoes, I was wondering if anyone has uses for them? I know you can thicken soups and gravies and they can be made at least tolerable with the addition of butter, creams, milk and other assorted things, but would like some other (healthy) options. Any help?

You could use them as a base for fish cakes. Other than that, I have never used it.

Look up recipes to make Gnocchi.

Make the mixture, add onion, an egg to bind, couple tablespoons of flour to bind, then fry in a pan on both sides to make a potato pancake.

Shepherd's pie, with hamburger and veggies, topped with potatoes and bake.

Add eggs, diced ham, cheese and put in muffin pans and bake to make potato puffs.
