Tuna or Chicken salad Lettuce Wraps

I assume that I am following a path worn thin by many folks on MFP, but I like to make a Tuna/Chicken salad and use it in two servings. This base recipe makes two 4 oz. servings and cost about 140 calories (don't forget to add the calories for the toppings and the lettuce too). :smile:

Mix/Fold together:
~3oz can Chicken/Tuna (packed in water) -drained- either works for me (not both at the same time)
1/2 raw carrot -shredded
1/4 stalk raw celery - diced
1/2 spring onion - diced
1 hard boiled egg white -diced (no yolk)
2Tbs Miracle Whip
3/4 Tbs sweet relish
1 tsp yellow mustard
pinch cracked red pepper
Salt and Pepper to taste

Dice up and reserve:
1 tomato shell (remove center seeds and all)
1/4 cucumber skin on or off, quartered and sliced thin
Chives(green onion tops)

You also need :
Several leaves of Romaine lettuce
Optional:
2% shredded cheese (go easy)
Slivered almonds, other (go easy)
Baby gerkins (again go easy, calorie bombs)
Any other healthy/light topping to add to the wrap goes here...


Now I am all set to make my Tuna or Chicken lettuce wraps. Layer on the Tuna/Chicken salad onto a lettuce leaf top with your reserved toppings (whatever you like) and roll and eat. It's like 'Taco Night' The fun of building the wraps and adding the additional toppings makes the brunch/lunch time meal fun and interesting, plus I spend the time to actually enjoy the meal and not rush through. Anyway there it is plain and simple.

    All that is only 140 calories? is that including the wrap??

    Hi - Just the Chicken/Tuna salad (half of it, 4 oz). Any toppings after that are additonal but:

    Off the top of my head:
    1/2 a tomato shell = about 25 cal.
    Lettuce about 12 cals a shredded cup
    1/4 cucumber is about 30 cal

    All addiional toppings need to be added to the total calories of the tuna/chicken salad.

    It is wrapped in lettuce so yes including the wrap (which is lettuce)
