omg... where do i start. all thai food. sub for heavy cream in ANY recipe.... i seriously have 5 cans at all times in my pantry, it's heaven! hahah

Thai Shrimp Curry Soup
Generic - Medium Raw Shrimp - Peeled & Deveined With Tail Off, 16 oz
Pacific Natural Foods - Organic Free Range Chicken Broth, 1 container (4 cup (8 fl.oz.) 240 mls ea.) 40 4 0 4
Sunflower Market - Coconut Milk Lite, 1 container (1 7/10 cups ea.) 250 15 23 5
Eggs - Whole, raw, 4 large 294 2 20 25
Generic - Fresh Basil Leaves, 1 container (16 tbl. choppeds ea.) 8 0 0 0
Generic - Green Onion, Fresh, Raw, 4 stock 12 4 0 0
Mushrooms - Raw, 2 cup, pieces or slices 31 5 0 4
Kroger Peanut Butter - Creamy Peanut Butter , 2 tbs 190 7 16 8
Thai Kitchen - Red Curry Paste, 1 tbsp (15 g) 25 4 0 1
Calrose Rice - Rice, 4 cup cooked (45g) 620 140 0 12
Garlic - Raw, 12 clove 54 12 0 2
Oil - Sesame, 2 tablespoon 240 0 27 0
Cook Green onion and garlick in sesame oil for a minute or two in a large heavy saucepan Add shrimp and cook until they begin to turn pink all over. Add mushrooms, bell pepper, curry paste and peanut butter. Cook until the mixture is warm throughout. Add coconut milk, eggs and enough of the broth to just cover all the mixture. When it begins to simmer, add Basil and simmer for 3-5 minutes.
Server over rice.
4 Servings at around 500-600 calories per serving (includes the rice!!)0 -
I use the SoDelicious no sugar added coconut milk (45 calories per cup) and use it in everything from cereal, to protein shakes, to cooking with it...I pretty much replace any milk ingredient with it. It is in the same fridge section with the soy and almond milks -- this is not canned coconut milk that I use.0

-- pour it over baked sweet potatoes
-- make curries
-- cook rice in it (SO SO good!)
-- use it in place of milk when making mashed parsnips/ turnips/ potatoes/ cauliflower

You can use it as a subsitute for milk in anything including baking. It's endless what you can do with it. Or just drink it on it's own. soooo yummy!0

Thai peanut sauce.
Very few ingredients are needed to make peanut sauce. For five servings you need 2 tbsp. smooth natural peanut butter, 2 tbsp. light coconut milk, 1/2 tbsp. lime juice, 2 tsp. reduced-sodium soy sauce, 1 tsp. brown sugar and 1/2 tsp. crushed red pepper. To prepare, combine all ingredients in a small bowl and vigorously whisk until smooth.
700 calories per cup but I usually eat a tbs. with steamed veggies or chicken.0 -
cubed chicken, mixed fresh vegetables, tomatoes, coconut milk, thai red curry powder. simmer till done. extra yummy. Can also use with thai green curry powder which has a milder and to me is wonderful with fish.0

I use coconut milk to cook my salmon. First I rub the salmon fillet with a mixture of mace, turmeric, cayenne, and salt and let it sit a few minutes. Then I put the salmon in a microwave safe bowl and pour in lite coconut milk until it covers the salmon completely. Microwave on high 5-8 minutes.
The salmon comes out moist and delicious. I'm sure you could also use different spice/herb combinations. You may have to practice the timing based on the thickness of your salmon fillet and the power of your microwave.0 -

And my recent discovery, I threw some lite coconut milk into pancake mix and it made some heavenly fluffy pancakes! Added cals since it's not mixed with plain water but such a lovely flavor. Could top it with some pineapple.0 -
