leftover buttermilk..HELP !

im attempting to make hush puppies for the 1st time from my cookbook, and the recipe calls for 1 cup of buttermilk..the container has 4 cups in it, so what are some good ideas OR recipes for the remaining amount ? i know about biscuits and pancakes, but im afraid to stray from my usual recipes of those:laugh: ..HELP, PLEASE !!

    I use buttermilk for pancakes (it makes them super fluffy!) and breaded chicken or chicken fingers :) I will soak the chicken in buttermilk for a couple of hours before I coat it/bake it. I also use it in corn bread and of course, hush puppies :)
    Next time though, instead of buying a carton just make your own so you don't have a ton left. You'll have to google but I think the ratio is 1c of milk to 2 tbs white vinegar and leaving it sit for 10 minutes or so to sour.

    What I do is portion it into ice cube trays and freeze them. Pop them into a good storage container and pull them out for future recipes.
