Insulin Resistance and Calorie Deficits

I have been borderline diabetic for 5 years or more. Through trial and error I have noticed that even if I have a calorie deficit I won't lose weight unless I've had a low carb week. For example, this week I have a 7200 calorie deficit but ate higher carbs and no weight loss. It's frustrating but I know if I would have eaten lower carbs I would of had a loss.

I can't come to grips with the fact that eating something high in fat is better than eating a piece of fruit. I think if I knew the reason why you can have a calorie deficit and not lose weight unless it's from low carbs it would make me less frustrated. Can anyone recommend a good book or some literature that explains this? I've had this conversation with my doctor but she just says the body doesn't process insulin correctly. I need a better explanation so I don't continue to get frustrated and give up. Thanks.
