Need Help with Diet... need ideas for food

I am 256lbs at 5'9"... I can eat around 1850 calories without exercise. (According to MFP)
I usually will go to the gym and exercise for at least 2 hours a day. So that will bring my Calorie intake up by 1700 Give or Take.
I am a big dude and I burn lots of calories cause my heart rate stays well in the upper 160s.
I also am incorporating weight training. i am working on my chest and arms now... I will start on the lower half soon.
Being that I can eat up to 1850 + 1700 with exercise calories eaten back. That brings me up to 3550 calories per day.
The problem that I am having is finding food that I can read that high.. It doesn't even have to be 3550 calories It can be 3000 I think that would be plenty for me.
I just live in a town where there are no fresh markets and I am surrounded by fast food and Walmart... so mostly can goods and sorry excuse for a produce isle... Plus the produce is super expensive.
I was hoping if anyone can shine some light on some things that I can do. I really would like meals with low sodium. I have a hard time staying in my 3500mg range.
