Looking for gluten free "Bean Pot" recipes

The Bean Pot is from "Celebrating Home" fka as "Home Interiors." My cousin loaned me her pot to see if I want to buy one, but I'm looking for gluten free recipes for my nephew.

I don't know anything about a bean pot, but I googled it, and since you want gluten free I think Arroz con Gandules would be awesome in it. Here's a recipe I just googled. My mom makes it all the time and I love it.
