Pizza Omelet

• ½ cup egg beaters original
• Cooking Spray
• 3 tablespoons tomato sauce
• 2 T shredded fat free cheese
• 4 mushrooms, sliced
• 2 T green pepper, diced
• 1 T onion, diced
• 16 g olives (1/4 of small can)
• salt and pepper, to taste
Heat a large non stick skillet over medium heat and spray with cooking spray. Add mushrooms, onion, and diced bell pepper. Just before the vegetables are soft add olives to warm. Set aside.

Add egg beaters, salt, and pepper to skillet and cook until set, lifting eggs to allow uncooked eggs to go underneath.
When eggs are set on surface, add vegetable mixture to half of omelet and fold other half over.
Top with tomato sauce and cheese.

Cover, remove from heat and let stand for 2 minutes so cheese can melt.

I have been trying to think of new ways to use egg beaters for breakfast and this is what I came up with this morning!
