Dinner - Tofu, Lentils, and Zucchini in italian sauce
Tofu, Lentils, and Zucchini in Italian sauce (4 Servings)
2/3 package of Tofu, Frozen (Freezing tofu gives it a nice texture)
1/2 cup lentils
1 small can tomato paste
2 zucchini
1 tomato
spices:
2 tsp garlic powder
2 tsp onion powder
1 1/2 tbsp oregeno
3 tsp basil
2 tsp dried parsley
-Thaw tofu and wring out the water. I used the defrost option on the microwave
-Cook Lentils in water (20-30 mins) Save some of the water, maybe a cup or two.
-In a deep skillet, fry up the zucchini for 3-5 mins or until almost done.
-Add Tomato, Tomato Paste and Lentil Water. Stir until paste thickens the water into a sauce. Add water as needed for consistency.
-Add tofu, spices, lentils and cook for a couple more minutes.
I ate this with some sprinkled Parmesan and rice. I think this would really be at home on some whole wheat pasta.
