Just diagnosed with Reactive Hypo. Looking for suggestions

Hello Board,
This past week, I have been officially diagnosed with reactive hypo after dealing with a slew of symptoms. As a medium distance runner (daily 5k with 10ks on the weekend), I have always believed a high carb diet was required. After this diagnoses and being informed by my doc to switch to a "lower" carb diet, I am now aware a higher carb diet isn't required. I am currently doing (i.e. 35c / 30f / 35p) as I was informed to balance my carb with my protein to create a 1:1 ratio or lower.
This is day 3 of my new lifestyle. As I am still new to this new lifestyle, I am looking for suggestions on literatures to read. It helped that my fiancee has PCOS so I was able to get a high level understanding. General literatures; low carb running; difference in macros between all the low and lower carb plans are some suggestions of literatures.
Even before my diagnoses, I tended to avoid high starchy vegetables (except pinto beans, and homemade sprouted lentils), and grains. Instead, focusing on low starchy alternatives. For example, cabbage and rutabagas are a staple to me because of my Slovakian hertiage.
I am use to baking everything from scratch, so I never eat any processed foods.
I have found foods containing MSG and Aspartame trigger a reactive response of cold hands, though I am not sure why. So, for now, those items are off my list.
