Oat/Wheat Low Calorie Pancakes

I've been on mission to try to find healthy lower calorie (and no oil) pancake. Here is my best recipe so far. Up until now, I have been using the entire egg, but looking for a way to balance the heavier pancake caused by replacing oil with applesauce. So, this time I used 2 egg whites instead of 1 egg, and I was a lot happier with it, it has the added benefit of less calories (however, also less nutrients).

I am curious to find what others are doing to make a healthier pancake (that taste good).

Heat griddle to medium heat (electric to 350 degrees)

1/2 cup - Unbleached All-Purpose Wheat Flour (white) [I'm going to try whole wheat flour next time, I keep going back and forth as I try things out] -- 200 calories
1/2 cup - Oats -- 150 calories (I measured before grinding them)
2 teaspoons - Baking Powder -- 10 calories
1/4 teaspoon - Salt -- 0 calories
1-2 packets of Stevia (2t / packet) -- 0 calories (or 1T sugar if you do not like artificial stuff -- 45 calories)

Grind oats and mix all dry ingredients together, set aside.

2 large egg whites -- 32 calories
1 cup - Almond milk unsweetened (I use vanilla flavored) -- 30 calories
2 tablespoons unsweetened applesauce -- 13 calories

Beat egg whites until they are foamy. Add in almond milk and applesauce until combined

Add in dry ingredients and mix together (leave lumpy).

Use 1/4C or 1/3C measuring cup and place pancakes on griddle. I use eletric griddle with a light coating of no calorie cooking spray. When I made these, my first impression was that I should have measured 1/2C of ground oats, but worked out well.

Total calories - 435, the batch for me made 9 pancakes, so 48 calories / pancake.

My recipe is derived from the Betters Homes and Gardens New Cookbook.
