Sweet potatoe

Im having sweet potatoe tonight.

I usually either just have it mashed, roasted or chipped.

I have recently made a s/potatoe and spinach bake which was lovely.

Do you have any other tasty ideas?

    I bake mine in foil with a little olive oil, salt, and herbs. Then for the topping, I cook beans in chopped tomatoes and tomato paste and season according to what kind of flavor I want (herbs for a more generic taste, cumin for a Mexican feel, etc) and put some low fat yogurt or salsa on as well. Super yummy and low calorie :)

    boil til soft then add cinnamon, honey and mash...great side dish.

    From the Biggest Loser cookbook. Microwave a sweet potato, break open and melt a wedge of skinny cow cheese or WW cheese on top.

    Just had a baked sweet potato tonight, topping was 200g of diced mushrooms mixed with fresh garlic and pepper with 30g of low fat cheese to melt on top. Lovely :)

    I love mine baked until the juices are browning on the outside, and then smothering it in spicy cajun seasoning.

    Slice in half, microwave until soft.
    Top with teaspoon (or tablespoon depending on your taste preference) of non-fat plain greek yogurt, one tablespoon of red salsa, one tablespoon of verde salsa. Mmmm... My fav sweet potato :smile:

    I go simple by baking it/roasting it in oven, then slice it open and add a dollop of nonfat plain greek yogurt and a handful of sliced green onion or shallot.... and a sprinkling of garlic powder. Easy peasy!

    I made sweet potato chili w-pork and black beans yesterday and it was one of the most awesome dishes I have ever had! The recipe is on cooking.com. It could be made easily without the meat. I didn't use the jarred chilis either since we are in a small grocery market. I cannot give it enough stars!!

    I cut mine into cubes, add a bit of olive oil, garlic, parmesan cheese and herbs (dried parsely, a bit of chili, oregano, dried thyme) bake in the oven for 30-35 minutes and it's delicious.

    You can really get creative with the herb part, I've gone from just oregano to adding oregano with paprika and chili for a spicier version

    Microwave sweet potato 15 minutes. Cut open spread 1 Tbsp coconut oil and sprinkle with cinnamon.
