TapoutXT and eating back calories

New. 60 years old. Day 15 TapoutXT. Can someone please explain "eating back workout calories"? I'm doing 1850 calories a day, do Tapout 6 days a week for at least 30 minutes per DVD (hey, I'm 60- gotta start somewhere). 40 protein, 35 carbs, 25 fat. Am I in the ballpark? Very rigid with the diet. All advise welcome. Thanks.
