Guilt-free clean eating flourless protein pancake recipe

Happy Pancake Day!
We (my friends and I) were discussing pancakes all day yesterday without even realising pancake day was right around the corner. Now I’m about to share with you my own recipe for guilt-free clean eating pancakes which are full of protein and fiber.
The beauty of this recipe is that the pancake is oven baked rather than fried so only a smidgen of oil is used.
Ingredients:
12.5g porridge oats
1/2 medium banana, mashed
3 egg whites
coconut oil for greasing (you can use whatever oil or cooking spray you prefer but I like the coconutty hint)
Preheat your oven to 220C (425F) and grease an oven proof pan (I use a round cake tin).
Put oats and just enough water to swirl them around, then heat over a medium heat until thick.
In a separate bowl whisk egg whites into a thick white foam.
Add oats and banana to egg mixture and whisk in.
Pour batter into baking tin/pan and place in oven for about 25 minutes. It will rise like a souffle then fall when taken out of the oven.
Top with sliced banana, melted peanut butter, chopped nuts….whatever takes your fancy (it’s good enough to eat plain too, if you’re a purist like me!)
Serves 1. calories 158, carbs 22, fat 1 (not inc oil), protein 20
