Not eating enough calories per MFP - suggestions?

I am having a hard time eating all the calories MFP wants me to eat. I just can't seem to get up to what they want a day no matter what I do. I always fall between 400-600 short. But I'm not hungry enough to eat and I don't want to eat if I'm not hungry.

I know eating too few calories is unhealthy so I don't want to fall into that category either.

Any suggestions?

    How many calories are you eating?

    It's easier for people to help if your diary is open.

    make sure your vitamins and nutrients are covered. when i eat salads for dinner my daily intake is always low, but i know what i am eating is loaded with everything i need.

    Look for calorie dense foods to add to your meals. It just takes a little food to bump up your calories by a few hundred. Avocado, nuts, peanut butter, cheese, olive oil, full fat dairy, etc.

    Breakfast. :
    Peanut butter on 15 grain bread- 200 calories
    Greek yogurt: 120

    Snack
    Banana-120

    Lunch:
    Chicken in a tortilla w spinach, salsa, and cheese-400

    Snack
    2 Hard boiled eggs w yolk: 260

    Dinner
    Lean meat. 300
    Broccoli-45
    Baked potato-120 (plus butter 60)

    Total: 1600ish

    There. Add better food. I have no clue how you can't "eat enough."
