I know this is more of a fall flavor, but you can buy canned pumpkin anytime, and I am so excited to find this yummy recipe! I found it on a website for healthy foods for toddlers - I gave it to my son & he gulped it down. I tried some, too and it was so good - I had to make an adult sized version! Here is the recipe:

1/2 c canned pumpkin
1 c vanilla almond milk
dash of cinnamon

Blend all three ingredients together & drink it up!!!

Calories: 130
Fat: 3
Carbs: 25
Protein: 3
Sodium: 150

    The whole recipe is 130 calories - right around 1 1/2 cups. I used Silk Vanilla Almond Milk, if that makes a difference.

    Sounds great! I love pumpkin. I have a few cans in my pantry right now, and some vanilla silk. I just lack any sort of spices... i should pick some up!

    A variation: Pumpkin Pie Smoothie (great for breakfast)

    Blend
    1/2 cup canned pumpkin (unsweetened)
    1/2 banana (frozen is best)
    1 tbsp honey
    1 tsp pumpkin pie mix (cinnamon, nutmeg, ginger, allspice)
    1 cup milk (I prefer almond or soymilk)
    2 tbsp ground flaxseed

    calories: 365 with 1% milk (max)
    295 with unsweetened almond milk (min)
    fat: 6.5 g (flaxseed adds healthy omega-3 fatty acids)
    fiber: 6 g

    I never crave ice cream after having a frozen banana-based smoothie!

    Where did you find any canned pumpkin. I haven't seen any since Xmas. They said the pumpkin crop got wash out. I am hoading one can in my pantry. Too precious to open it up.
