I keep seeing people calculating their calories burned based on heart rate? If that is true how dow it work? And how can I do it without a heart rate monitor?

In short you can't do this without a heart rate monitor.
You need to know the average heart rate for your exercise session and therefore need constant measuring of your heart rate. HRMs then use various formulas to calculate an estimated calorie burn from the avergae heart rate, such as the one given in this article: http://www.livestrong.com/article/78365-estimate-calories-burned-heart-rate/0
