5" Spicy Italian Sub Sandwich

Hey all...
I love Italian foods and used to 'live' at my neighborhood Italian deli until I decided to drop 20. That being said, I wanted to create an Italian style sub sandwich that would taste extra primo good, but comes in at under 500 calories. So here it is (as entered into MFP data):
Homemade - 5" Spicy Itali-Sub: 3oz Mt; Salami, Hot Capocollo, Mortadella, Provolone-.5oz, Ltc/Onn/Drsg, Frch Br...
Calories 494, Carbs 36, Fat 27, Protein 27
Compare this to a 'standard' Italian sub at Subway...
Calories 530, Carbs 42, Fat 31, Protein 17
I use a crusty french bread cut 5" instead of 6", a very light drizzle of "Marconi's Submarine Dressing" (about 1/2 tsp), 3 oz of Italian deli meats thinly sliced (purchased at the deli), Provolone cheese thin slice (or 1/2 regular slice, lettuce, onion and optional tomato.
The Hot Capocollo makes it delicioso!

I know the fat grams are a little bit on the high side at 27 due to the Italian meats. I went back to check fat grams on those and for 3 oz it was 18 grams. If I use 3 oz of Cajun Turkey Breast instead, that's only 3 fat grams. This way the sandwich would only have a total of 12 fat grams.0
