How to Keep Cooked Eggs

So my new favorite breakfast is breakfast sandwhich on a whole grain english muffins. The problem is I would like to be able to cook the eggs in advance. I know that sounds really gross, but hear me out. I want to make 4 at a time, using 5 egg whites and one whole egg. I feel this could cut down on my cholesterol and caloreis. I just cook them up in a muffin tin, but I don't know what to do with them afterwords. Do they store in the fridge well for long, or if I freeze them how do I unfreeze them? Help!

Not sure what you mean by "cooked" but I boil eggs, chill them and refrigerate them for up to a week (usually only 5 days). I peel them when I eat them, not before refrigerating. I eat them cold. I have not had any ill effects from doing this but YMMV.0

I eat a lot of hard boiled eggs too! These I crack into a muffin tin and bake. It makes little baked egg... disks? Thats the best way I can think of describing it! I guess I could try keeping them in the fridge, I just would have to make sure to eat it within a week.0 -

Yeah I was going to say they turn out great after being frozen. I follow this recipe to make my own turkey sausage/egg white mcmuffins (I was buying those Jimmy Dean Delight muffins all the time).

Once cooked they will last in just the fridge for up to five days, so if you're eating them daily there's no need to freeze. Just store in the fridge as you would any leftovers.0
