Chocolate Peanut Butter Flax Cookies

I've been making these at least once per week!

1 cup flax seed meal
8 Tablespoons semi-sweet chocolate chips
8 tablespoons Chocolate PB2
2 tablespoons unsulphered Blackstrap Molasses
Optional: 2 tablespoons protein powder

Steps:

1. Mix PB2 with 1/4 cup water until smooth
2. Add flax and stir until mixed
3. Add Molasses
3. Add protein powder if desired and stir until mixed - may need to add some water
4. Add chocolate chips

Once everything is thoroughly mixed together, divide into a 12 serving muffin tin. Compress the contents into each cup of the muffin tin, making little round disks. Bake for 20-25 min at 325 degrees.

Makes: 12 servings.
Serving with protein powder: 60 calories, 6g net carbs, 4g protein, 2g fat
