Mexican food experts (authentic) what foods can I eat?

Ugh I am a huge mexican foods person being my husband is from Mexico and his family taught me to cook but maaaan. Everything is with manteca, or corn oil, or corn tortillas, or salsas with salt and spices, or meats that are unhealthy!! I NEED HELP PLEASE I CANT GIVE THIS FOOD UP!! 0_0

    What's unhealthy about salsa, esp if it's made fresh? I lived in Mexico for 7 years, and it's very easy to cook/eat healthy, as long as you stay away from tamales! lol. Eat tortillas sparingly, and grill them, don't fry them. Do a lot of fajitas, carne asadas, tortas with lots of veggies, pozole, fish tacos, quesadillas with steak/chicken and beans and salsa, taco salad, tortilla soup, huevos racheros, baked empanadas, seriously the choices are endless.

    Cook it healthier. I know traditionally, beans are cooked with fat or bacon. Try using spices. That way you cut out fat without losing flavor.

    Bake when you can. I abosultely love quesadillas, but you can bake them, they also come out crispier that way. Use extra virgin olive oil on them lightly or use an olive oil spray when cooking instead of pouring out oil. Or if you do choose to use oil measure it out.

    Make tortillas thinner, thinner means less calories.

    incorporate black beans in meals. They are great and add a southwest feel to a dish.

    Pico de gallo is your BEST FRIEND. If your making a burrito instead of cheese use pico! Less calories and delicious.

    Also guac is awesome! and sliced avocados are healthy and delicious.
