Help! I don't want to be skinny-fat!

Hey guys, could do with some help. I've lost about a stone, and am at my GW, but I'm still pretty flabby.
Anybody have ideas to help with this? I do pole dance and rock climbing once a week, and have started up at the gym again, but only once a week.
Here's some stats to play off if that helps at all:
SW: 139 lbs
CW: 124 lbs
i'm not really looking to lose more weight, just fat if possible.
Height: 5'3
Age: 21
Waist: 29"
Hips: 36"
Chest: 34"
I did the online military body fat calculator and it came up with 29%! So I'm not very happy about that.
Not sure how to change my diet to best solve this, at the moment I eat a vegetarian diet (actually I've been veggie a long time!) and try to get between 20-30% protein a day if possible.
What can I do? Is it just a case of fitting in as much exercise as possible without over-training?
