im queen of stir frying :) i put about 2 cups of frozen veggies (type is your choosing- nothing that already includes sauce), 5-6oz of lean protein (chicken breast, shrimp, etc), .5-1tbsp of olive oil, and 2 tbsp of a stir fry sauce of your choosing (i use a La Choy's 25cal orange ginger sauce) in a pan and stir fry away- and u have a healthy low carb high protein lunch thats DELICIOUS and SUPER easy!

I am another one on the leftover bandwagon. I try to put aside one serving of whatever I make for dinner for lunch. I may not eat it the next day -- sometimes I'll, for instance, make veggie chili on Monday night and then take the leftovers for lunch on Wednesday, since I don't always like to eat the same thing for multiple days in a row. I've also been known to put aside servings for the freezer, so I build up a variety of frozen meals I can take down depending on what tickles my fancy that day. It takes a week or so to build a selection, but it's worth the little bit of extra labor.

I also like wraps with lavash (rather than tortillas). My current favorite is lavash, low-fat cream cheese mixed with salsa, pepperjack cheese, turkey from the deli counter, and lettuce. Pair with some carrots or other veggies, some fruit, or a yogurt. The lavash adds some carbs, sure, but it's not as bad as regular sandwich bread. You can also make lettuce wraps if you really want to avoid the bread issue.

Another wrap I make often is lavash, hummus, and veggies -- red peppers, carrot shreds, lettuce or spinach. Sometimes I add either chicken or vegetarian chikn seasoned with curry for a shwarma-type experience.
