crock pot recipes?

Hey y'all. I'm looking for any of your crock pot recipes that are good and relatively low calorie. Thanks in advance!

    Try skinnytaste.com - it's a blog with lots of great low-cal recipes - most of my colleagues at work swear by it.

    Also, I like to put a lean meat (pork/chicken) and make low-cal taco filling (or pepper stuffing). Like:

    2 - 4 chicken breasts
    Tomato-Chicken broth (low-fat)
    Tomato paste (tblspn)
    Fresh, de-seeded jalepenos
    garlic
    onion (makes stuffing for 4 - 8 peppers)

    I cook it all day in the slow-cooker, then stuff it inside (steamed!!) bell or poblano peppers with a little cous-cous, top with low-fat cheese, and bake until the cheese bubbles.

    You can steam the peppers on the stove pretty easily.

    Just made this one tonight it was delish !!
    3 frozen chicken breasts
    8 oz fresh sliced mushrooms
    8 oz light sour cream
    I pkg uncle bens wild rice, long grain
    3/4 cup light Italian dressing
    Cook chicken in crock pot then shred it up
    Combine all other ingredients then mix up with chicken
    Spray a 9x13 pan and bake chicken mixture for 20 min or till bubbling
    Also can add mixed veggies to this for more variety:)

    I make turkey chili (with ground turkey, your favorite beans, and some corn), then I freeze it in individual portion sizes, and just take it out of the freezer when I need it.

    Thanks for your terrific crock pot salsa chicken recipe--I think it is great. I adapted it by cooking in beer and adding a bunch of veggies and taking out the cream cheese. I use 6 lbs of boneless chicken breasts at a time and freeze most of it when it's done--low fat protein for weeks!

    Fantastic! That's the beauty of it, it's bare bones so you can doctor it to your liking. And having prepared food on hand is always a bonus!
