YUMMY EASY ORGANIC VEGAN MEAL THAT MAKES ALOT

I am trying to eat as much organic foods as possible regularly. Target has an awesome selection of frozen mixed veggies. Lentils are RIDICULOUSLY CHEAP LITTLE MIRACLE CIRCLES OF FIBER.
So this is what I do:
Get a big Dutch Oven, put about a cup and a half of lentils with water just enough to cover the lentils. Let them boil.Now add: a box of frozen Kale(thawed first), a few bags of frozen mixed organic veggies, one finely chopped organic onion, one box of frozen Lima beans. And chop up a fresh tomato if you have one.
Season with the following:
Spike No Salt Seasoning(you can buy it at Whole Foods), Black pepper, a dash of Cumin, a couple shakes of sea salt.
Add fresh Cilantro and fresh Parsley.
Add a box of organic broth, I prefer Pacific Veggie broth, but any will do. Just stay away from the canned crap. then make sure there is enough water added to cover everything.
Cook for roughly 2 hours.
Makes about a million servings. I just keep it in my fridge in a big container and then have easy already made servings of organic veggies to add to whatever I'm eating.
I'm sure a slow cooker would be good for this too.
Home made soup is the best way to lose weight and get your organic servings of veggies in.
I'm a busy single mom so making something one time that makes a lot is important to me.

i know lentils come in different colors, any of them work for this. and feel free to add any veggies you want. the original recipe for this called for cabbage, i didn't have one. it still turned out awesome. i don't use any oil like most homemade vegetable lentil soups call for and i have no idea how many calories this is. but it's all veggies so you could probably guess the calories pretty low, and it's one of those dishes that you could pig out on ,and still be fine with your calorie, cholesterol, and sodium amounts.0
