roasted ricotta cheese

my sweet hubby brought me a wedge as a surprise. any good recipes? i have heard it is good as a dessert drizzled with honey. or i was also thinking of using it on a pizza with some balsmic carrots, olives and salami. i'm just not sure what to do with it yet (it's so fun figuring it out). i'd love to hear what you do!

    I've never heard of roasted ricotta cheese before. But it sounds like it'd be good. Can't wait to hear what you do with it.

    My granny makes what she calls R&R maters ... It is Roma tomatoes cut in half & the insides scooped out.. then shredd your ricotta, & mix fresh garlic, basil & italian parsley with it .. put a spoonful of the mix inside each tomatoe half sprinkle bread crumbs or crushed crackers ontop & drizzle olive oil over them... bake them for 20 min @ 400 degrees... very yummy appetizer or snack.
