hmm.. not sure if this is quite what you are looking for but i made it before and it was pretty good.. didn't have that rich buttery taste that scampi usually has but it was decent!

this is one from weight watchers i had made awhile back....uses NO butter
http://www.weightwatchers.ca/food/rcp/RecipePage.aspx?recipeId=52941
Ingredients
2 tsp olive oil
4 clove(s) (medium) garlic clove(s), minced
1 tsp dried oregano
16 oz uncooked shrimp, medium, peeled and deveined
1/4 cup(s) table wine, dry white or vermouth
3/4 cup(s) reduced-sodium, chicken broth, fat-free
1/8 tsp table salt, or to taste
8 oz uncooked linguini, cooked and kept hot
2 tsp cornstarch
1/8 tsp black pepper, or to taste
1/4 cup(s) fresh parsley, fresh, chopped
Instructions
Heat oil in a large skillet over medium-high heat. Add garlic and sauté 1 minute. Add oregano and stir to coat. Add shrimp and sauté until bright pink, stirring frequently, about 3 minutes. Add wine and simmer about 1 minute.
Dissolve cornstarch in chicken broth and whisk until blended. Add mixture to skillet and simmer 2 minutes, until sauce thickens. Season to taste with salt and pepper.
Transfer cooked linguini to four individual shallow bowls and spoon shrimp and sauce over top; sprinkle with parsley. Yields about 1 1/3 cups of pasta, 1/4 cup of sauce and 3 ounces of shrimp per serving.0 -
This is DELICIOUS...but only if you like cilantro!
Cilantro Shrimp
1 cup cilantro, chopped
2 jalapenos, diced
Juice of 2 limes
1/2 cup olive oil (could probably use less)
1-1/2 tablespoons cumin
1 teaspoon cayenne
2 lb frozen cooked shrimp, thawed (I like Costco's)
1 red onion, sliced
3 lemons, sliced
Mix together first six ingredients and pour over shrimp in large bowl. Refrigerate a while. In a large serving dish, layer shrimp, red onion, and lemon slices. Repeat.
This makes a big batch, so you could easily cut it in half.0
