    Feel free to look at my food diary (I've been a vegetarian all 25 years of my life and was a vegan for three years). Also, about 1/3 of my friends on here are vegetarian or vegan...feel free to chat them up as well.

    I don't know if you eat these already but I love the morning star products they are great and easy. I will have the sausage patty on toast with and slice of cheese for breakfest and it stay with me for quite sometime. Also the bacon makes great BLT's.

    I am vegan... right now, i am fixing a fantastic recipe from the Ultimate Uncheese Cookbook for my daughter and I (the others have soccer so we get this special treat alone!)... It is a GREAT cookbook!!
    I also enjoy Clean Eating magazine - not vegetarian but has some great ideas and many can be adapted.

    One of my favorite sandwiches for just me is a tomato & avocado sandwich on Nature's Own Double Fiber Wheat bread with a touch of veganaise.

    I also have a lot of hummus/cucumber/tomato wraps... yum! When I have to bring lunch to work (not often - I am an AM preschool teacher so usually leave by noon), everyone is always jealous of my yummy wraps/ sandwiches/fresh fruit. :o)

    Oh - when I want a BLT, I use tempeh... slice thinly and cook on the stove. Works great - nice way to add protein!

    (The quiche recipe only calls for one pie crust but when I tried it the filling was WAY too much for one shell, ended up with two quiche...)

    They're nothing fancy, nice and quick for weeknight dinners. I found these websites to be helpful for meal ideas. We rarely eat meat in our home anymore but cheese is an ingredient in all of these, hopefully they help!

    I'll definitely be trying the hummus/cucumber/tomato wrap tomorrow, that sounds awesome!
